Bruschetta Salad with Port Vinaigrette

Vinaigrette:

2-Tablespoons- Royal Escort Port

1-Tablespoon- Balsamic Vinegar

1-Tablespoon- Extra Virgin Olive Oil

1/2-teaspoon Fresh Thyme 1-teaspoon Sugar

Combine all ingredients in small bowl and whisk together. Pepper to taste and set aside.

Salad:                                                                                  Croutons:

4- Medium Tomatoes- cut in small chunks              1-Baguette cut into bite size cubes 3-Tablespoons-Finely Chopped Onion                       1 1/2-Tablespoons Olive Oil

2-Tablespoons-Fresh Basil- Chopped                      1-3-Cloves Minced Garlic 1- 8oz- Container Mozzarella Cheese Pearls (drained)

Fresh Ground Pepper to taste

Crouton Preparation: Preheat oven 350º

In a small bowl, combine olive oil and garlic.

Place bread cubes in a large bowl and pour olive oil mixture over them. Toss until all pieces of bread are coated, arrange in a single layer on a baking sheet. Put in the oven.

Bake 18 minutes or until toasted. Remove from oven and cool.

Salad Preparation:

In a large bowl, mix salad ingredients together and pour vinaigrette over salad mixture. Cover bowl and put in refrigerator until ready to serve.

Serving:

Just before serving, mix Croutons in the salad.

This refreshing salad is a great addition to a summer picnic. Serve with sausage or a nice barbequed steak.
